I overhauled a recipe from a magazine cut out last night and found these were so good ( and good for us), that the girls had them with their scrambled eggs for breakfast!
Yes, cookies were served for breakfast.
OATMEAL CRAISIN-CHOC CHIP COOKIES
2 sticks softened butter
1 cup succanat
2 slightly beaten eggs
2 cups GF flour ( I used 1 c brown rice flour, 3/4 cup sorghum flour, 1/4 cup tapioca starch)
2 cups rolled oats
1 1/2 tsp xantham gum
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1 cup craisins
1/2 c coarsely chopped walnuts
1/8 c semi-sweet chocolate chips
1/4 c milk
Preheat oven to 350. Line baking sheet with parchment paper, set aside. In mixer or bowl, cream butter and succanat until light and stir in eggs until combined. In mixer or seperate bowl, combine all dry ingredients plus raisins, walnuts, and chocolate chips. Add dry to wet and stir to combine. Stir/mix in milk. Drop onto parchment paper and bake until golden brown for 15 minutes.
These cookies are amazing with a slight crunch on the outside and a nice softness on the inside. We only had about an 1/8 cup chocolate chips left in the freezer and these cookies really didn't need more than that.

What's wrong with cookies for breakfast? Some are no different then Granola or Trail mix. I think I may just have to do that tomorrow.
